Sliceable Chocolate Ganache



In a large bowl

2 1/2 cups (425g) good chocolate, chopped



In a small saucepan

3/4 cup (171g) heavy cream

2 tablespoons (39g) light corn syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

In a small saucepan, heat the cream, corn syrup, vanilla, and salt until hot, letting off steam but not simmering.

Pour the hot cream mixture over the chopped chocolate into the large bowl. Let sit for a minute, and then give it a good stir. Let it sit for another minute, and stir again. Rest it for another minute, and then whisk it until smooth a shiny.
