The classic Bee's Knees is simple, refreshing, and just a little tart. This punched-up version delivers a bit more of a citrus pop and some earthy freshness by adding a dash of orange bitters and muddled sage leaves. I like to take it one step further by using a citrus-forward gin, like Tanqueray No.10 or Komasa Tangerine. This cocktail is the grown-up lemonade I've always dreamed of.
In a cocktail shaker
¾ oz sage simple syrup
1 dash orange bitters
1 oz fresh lemon juice
2 oz gin

To make the sage simple syrup, bring one cup of water and one cup of sugar to a boil. Add a handful of fresh sage leaves and simmer for 5-10 minutes. Remove from heat and cool completely. Strain the syrup into an airtight container and keep in the fridge for up to a week.

Add all of your ingredients to a cocktail shaker and shake with ice. Strain into a chilled coupe glass. Garnish with a fresh sage leaf.
