Coconut Paloma



I know, I know, a Paloma is *traditionally* made with Squirt grapefruit soda, but hear me out. There's just something special about the fresh squeezed stuff when you're paring it with Los Sundays Coconut Tequila. Not sponsored- I just really love this stuff! Unlike some coconut flavored concoctions, this juicy cocktail tastes less like an old bottle of Coppertone, and more like squeezing a grapefruit into a freshly cracked coconut and sipping it on a tropical beach. I can't think of anything better for chasing away those winter blues.

 

In a cocktail shaker

2 oz Los Sundays coconut tequila

2 oz freshly squeezed grapefruit juice

½ oz fresh lime juice

½ oz simple syrup (optional)



For the rim

Shredded coconut

Flaky sea salt

Lime wedge



On the sidelines

2 oz club soda

Grapefruit slice for garnish

Start off by mixing together the shredded coconut and sea salt on a plate. Run the lime wedge around the rim of a rocks glass, or on a larger section of one side. Dip the lime-coated area into the salty coconut and set aside.

Add the tequila, grapefruit juice, lime juice, and simple syrup to the shaker. Shake with plenty of ice until chilled.

Strain the shaken cocktail over fresh ice in the rimmed glass.

Top with club soda and garnish with a grapefruit slice, and transport yourself to a locale with abundant sunshine and a warm breeze.
